Corn Relish:

Cup frozen corn, defrosted

1/2

 

Cup chopped seeded tomato

1/2

 

Cup chopped seeded cucumber

1

 

Cup canned black beans, rinsed & drained

3

 

Tablespoon sliced green onions

1 1/2

 

Tablespoons cider vinegar

2

 

Teaspoons olive oil

1

 

Teaspoon sugar

1/2

 

Teaspoon ground cumin

1/4

 

Teaspoon salt

 

 

 

Instructions:

1.

 

Combine ingredients in glass or ceramic bowl.

2.

 

Refrigerate for 1 hour to overnight.

3.

 

Serve with kabobs, steaks or burgers.
